Easy Peasy Overnight Oats Vegan Breakfast
Yogis are encouraged to adopt a vegetarian diet. As part of the Ahimsa (non-violence and love to all) practice, and also vegetarian diet (supposedly) increases the flexibility of a body. In planning our meals, we need to plan in mind, of having a balanced diet. When one excludes meat in the meal planning, one is missing out on a whole deal of proteins and certain vitamins. Therefore, incorporating non-animal source of protein is important in the planning. Here are 2 vegetarian breakfast overnight oat recipes, adapted for yogis who are looking to a nutritious and time-saving, easy-to-prepare breakfast.
Recipe 1: Strawberry Chia Overnight Oats
Ingredients:
• 1/3 cup wholegrain oatmeal
• 2 Tbsp chia seed
• ½ cup fresh strawberries
• 1/3 banana, sliced
• 2 Tbsp almonds (or nut of choice)
• 1 cup non-dairy milk beverage of choice (almond, coconut, soy brown rice etc)
• 1 Tsp vanilla extract
Directions:
1) Place oatmeal, chia seeds and the 2 fruits together in a bowl.
2) In a separate bowl, whisk together milk and vanilla.
3) Pour the whisked mixture into the bowl of oat-chia mixture, and place it in the fridge overnight.
4) In the morning, remove from fridge and top with your choice of nuts.
5) It is now ready for consumption. You may add more milk for a more liquid consistency
 

    Recipe 2: Lemon, Thyme and Honey Overnight Oats

Ingredients:
• 1/2 cup rolled oats
• 2 Tbsp chia seeds
• 1 Tsp lemon zest
• 1 Tsp lemon juice
• ¼ tsp vanilla extract
• ½ cup Honey greek yogurt ( may replace with thick vanilla-flavoured)
• 1/3 cup non-dairy milk beverage of choice (almond, coconut, soy brown rice etc
• 2-3 sprigs of fresh thyme (remove stems. Use only leaves)
• 1 Tsp honey
• Extra honey to serve
Directions:
1) Mix all the ingredients together in a bowl.
2) Cover the bowl with plastic wrap and leave it overnight in the fridge
3) In the morning, serve it with extra honey
4) In the morning, remove from fridge and top with your choice of nuts.
5) It is now ready for consumption.
