Recipe Sharing – Crunchy Homemade Granola

I’m passionate about food and I’m always delight to share good food with family and friends. Having said that yoga has helped me to engage in a healthier lifestyle, I try to make sensible choices when it comes to food. We have a loose rule in our family – the 70/30 rule. 70% unprocessed food, mostly fruit, vegetables and grains. 30% fish, meat, dairy, processed food, sugar and fried food. So we follow the rule at home and indulge when we eat out, and of course no rules when we are on holiday! There are too many things that we all enjoy and there should be some indulging moments.

 

I want to share a recipe that has been enjoyed by many. You can modify the recipe to your liking:

 

Ingredients

⅓ cup maple syrup

⅓ cup packed brown sugar

4 teaspoon vanilla extract

½ teaspoon table salt

½ cup vegetable oil

5 cups old-fashioned rolled oats

1 cup walnuts, chopped

1 cup raw almonds, chopped

½ cup raisins, chopped

½ cup cranberries, chopped

½ cup goji berries, chopped

½ cup dates, chopped

½ cup unsweetened coconut flakes

 

Instructions

Adjust the oven rack to upper middle position. Heat oven to 180 degrees C.

Whisk maple syrup, brown sugar, vanilla, salt and oil in a BIG bowl.

Add the oats, almonds and walnuts in to the liquid mixture and mix well

Transfer the oat mixture onto baking sheet and spread it to make an even layer.

Bake for 30-35 minutes, once ready and cooled, mix in the chopped dried fruit and shredded coconut.
